                 HALUWA

            (SWEET MEAT)

      INGREDIENTS:

  • One cup varango flour (nishashta)

  • Two and a half cups of sugar

  • Three quarter cup of oil

  • Quarter tea spoon of nutmeg

  • Half tea spoon whole cardamom seeds

  • 125 grammes of flaked blanched almonds and pistachios

  • Pinch of saffron

  • Pinch of orange and red food colouring

Cooking time approx.sixty minutes  

           METHOD:

  1. Soak the flour in two cups water for at least half an hour, overnight if possible,

  2. Sieve this mixture a few times to remove the grit, and transfer to a large saucepan,

  3. Add the remaining ingredients (except nuts) and cook on high heat, stirring vigorously taking care that the mixture does not stick to the pan and until it becomes a thick sticky mass virtually lifting out of the pan,

  4. Reduce heat and add half the nuts,

  5. Cook for a few minutes, stirring frequently,

  6. Transfer into the oven at 160ºC (Gas Mark 3 or 325ºF) for fifteen - twenty minutes

  7. Serve in a shallow dish and decorate with remaining
