Pilau
INGREDIENTS

½ kilo rice
1 cup ghe. or salad oil 
1 cup sliced onions  
½ fresh ginger root crushed 
5 crashed cloves of garlic
 ¼ teaspoon all spice
2 tomatoes
½  kilo peeled potatoes
1/2 kilo meat (cubed and cooked)
 4 cups hot water or stock from the cooked meat
salt to taste

METHOD
clean and wash rice. 
Fry onions in ghee or oil till brown.
Add ginger, garlic and spice. 
Fry for one minute on medium heat.
Add tomatoes and cook till tender. 
Add potatoes, meat and rice.
Stir well and then add stock and salt.
Cover pot and cook on medium heat.
When food Is nearly dry, turn down heat to low. 
Cover and put a weight on top of the lid. 
Leave to cook on low heat for 10 minutes.

Serve hot with Kachumbari.
